Cold dressing is the enemy of a deeply flavorful potato salad. When potatoes cool, their starches retrograde and lock up, causing oil and citrus to pool on the surface rather than penetrating the flesh. By tossing freshly boiled, steaming hot potatoes directly with the dressing, the starch matrix readily absorbs the olive oil and lemon juice, creating a highly seasoned base from the inside out.
In this traditional Turkish preparation, we use that same residual heat to gently wilt an abundant mix of fresh mint, parsley, and scallions. Pouring the hot potatoes over the raw greens mellows their sharp bite while preserving their vibrant color, striking a perfect balance between a tender salad and a fresh herb mezze. The combination of sweet paprika, warm Aleppo pepper flakes, and dried mint adds a distinctly Mediterranean dimension that completely eliminates the need for heavy mayonnaise.
